Many offer the famous imu ceremony which is held at the beginning of the luau. It is an underground oven in which a pig is cooked wrapped inside local leaves and cloth. The ceremony is not a fancy event; it shows a Hawaiian person open the underground pit to reveal the cooked food but it is still very interesting if you have not experienced one.
